Cinnalmond Bites and a Giveaway!!

I’m super excited to share this recipe today because it comes with a giveaway for the cookbook No Bake Makery, for you! Though it doesn’t happen as often as I’d like, I love an opportunity to give you stuff. I’m a gifter and I love it. BUT! let’s talk these little cookie, truffle bites.

These little bites are dead-easy to make. Everything gets whirled in the food processor all at once–chocolate cookies, cinnamon toast cereal, almonds, salt, a teensy bit of milk, and some honey.  The dough is then scooped, rolled, and chilled before getting dressed with some candy coating (or tempered chocolate). These bites are sweet-sweet-and-salty. I could see kids going crazy-nuts for these (and they could totally help!), but they make the perfect two-bite indulgence–which is sometimes all I want, just a few bites of sweetness.

Cinnalmond Bites

From No Bake Makery

The recipe calls for almond milk, but I’m sure you could use whatever milk you’d like. These are also great from the freezer. 

12 chocolate sandwich cookies (Like JoesJoes or Oreos)

1 cup cinnamon toast cereal

5 tablespoons sliced almonds

2 teaspoons ground cinnamon

2 tablespoons honey

1/4 cup almond milk

1 teaspoon sea salt

1 1/2 cups candy melts or candy bark (or temper some chocolate, if you dare)

Line a cookie sheet with wax (or parchment) paper and set aside.

In a food processor, process the cookies and cereal until fine crumbs form, about 1 minute. Add 3 tablespoons of the almonds and 1 teaspoon of the cinnamon and process for another 30 seconds. Add the honey and almonds milk and process another 30 seconds. Transfer to a clean bowl.

Roll the dough into 1-inch balls (I chilled the dough for 30 minutes before beginning this step). Place on the prepared cookie sheet and chill another 45 minutes.

Roughly chop the remaining almonds and mix with the remaining cinnamon and salt. Set aside.

Melt the candy coating according to package instructions. Dip balls into the chocolate and place back on the sheet, sprinkle with almond mixture, and chill until coating is set, about 1 hour. [/recipe]

Maple-Pumpkin Granola

Sometimes, when stressed and trying not to eat a whole pizza worth of feelings, I turn to something crunchy. It’s just so dang satisfying and if I’m going to eat my feelings, my jaw should have to work a little for it.

Enter granola. I tend to make it pretty healthful–reaching for honey or maple in place of plain sugar, and filling it with plenty of seeds and nuts for texture and interest. Granola can be as plain-jane as you want it or as crazy as you’d like–it’s versatile that way. This batch is flavored with lots of maple for sweetness and fragrance, olive oil encourages maximum crunchiness, pumpkin makes a subtle earthy appearance, warm spices and toasty nuts + seeds add depth, thick-rolled oats add great chewy-crunchy texture. This granola makes a great pair sprinkled over yogurt or swimming in a bowl of milk. It’s also great, out of hand, for crunching through some stress.

Maple-Pumpkin Granola

I use Bob’s Red Mill Thick Rolled Oats here, which I find at any supermarket in the natural foods section. I like the more substantial chew of these particular oats, but any brand you like works just as well. The pumpkin isn’t front-and-center in this recipe, it’s mostly a background flavor, as the puree softens the oats and works against that crunchy texture so beloved in granola. Also, I added a variety of seeds and nuts–I usually just add whatever is left over from other recipes–feel free to switch them up or omit as desired. 

3 cups rolled oats

1/2 cup raw walnuts

1/2 cup raw almonds

1/2 cup unsweetened coconut flakes

1/3 cup sunflower seeds

3 Tablespoons flax seeds

3 Tablespoons sesame seeds

pinch of salt

1 teaspoon cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon allspice

1/4 teaspoon grated nutmeg

1/2 cup maple syrup

1/3 cup olive oil

2 teaspoons vanilla extract

3 Tablespoons plain pumpkin puree

Preheat oven to 325*F. Line a baking sheet with parchment.

In a large bowl combine oats, nuts, coconut, seeds, salt, and spices. In a large measuring cup whisk together maple, oil, vanilla, and pumpkin. Pour the maple-pumpkin mixture over the oats mixture and stir to coat well. Spread the mixture onto the baking sheet in an even layer and bake 15 minutes, stir, and continue to bake in 10-15 minutes intervals, stirring well between each, until the granola is uniformly golden and no longer moist. The granola will crisp a bit more as it cools. Store completely cooled granola in airtight containers for  1-2 weeks.


Raspberry Cornmeal Crumble Bars

It really feels like spring has sprung around here. We’re having lots of sun with a little chill in the air, the days are getting longer, flowers are blooming, and it all has me craving berries and dreaming of summer.

Though berries aren’t really at their peak this early, I can’t help but daydream about tart/sweet berries nestled in crisp, textured crumbles. These bars make use of always-at-their-peak frozen berries. The easy crumble acts as both a base and topping, and with the addition of cornmeal and ground almonds, makes for the best sandy texture.

These bars are unassuming at first, but I find myself sneaking a corner here and there, the tartness of the berries next to the pleasant grain of the cornmeal and almonds works some sort of magic that keeps me coming back. I’ve been snacking on these with a cup of tea or coffee, but they are elevated even more served with a scoop of vanilla ice cream–taking these treats from a humble bar into the realm of a real-deal dessert.

Raspberry Cornmeal Crumble Bars

I added lemon and vanilla to the crumble mixture, these additions aren’t necessary, but play nicely with the tart raspberries. 

3/4 cup natural almonds OR 1 cup almond meal

1/2 cup yellow cornmeal

2 cups all-purpose flour

3/4 cup sugar

1/2 teaspoon coarse salt

zest of 1 lemon

1 vanilla bean, split and seeded

2 sticks (8 ounces) unsalted butter, melted

10 ounces frozen raspberries

Preheat oven to 350*F. Line an 8×8 inch baking pan with parchment, leaving an overhang on 2 sides.

In a food processor, if using whole almonds, pulse until almonds are finely ground, you should have about 1 cup. In a large bowl rub lemon and vanilla into sugar until fragrant and combined. Whisk in the ground almonds, cornmeal, flour, and salt. Stir in the melted butter and mix until the crumble is evenly moistened. Press about 2/3 of the crumble mixture, evenly into the bottom of the prepared pan. Scatter raspberries over the top and top with remaining crumble. Bake until the top is golden–about 35-40 minutes. Cool on a rack before cutting.
