Sweet Potato Chicken Hash

A hearty and delicious chicken and sweet potato hash perfect for breakfast, lunch, or dinner!
  • 2 boneless, skinless chicken thighs cut into chunks (about 1½ cups)
  • 1 medium sweet potato, peeled and diced (about 2 cups)
  • ½ cup chopped onion
  • salt and pepper, to taste
  • olive oil
  • parsley and fried egg for garnish if desired.
  1. In a skillet heat about 2 teaspoons of olive oil over medium high. Toss the chicken with a pinch of salt and pepper. Add to the heated pan and cook until chicken is browned and cooked through. Remove the chicken from the pan and set aside. Add about 1 tablespoon more of olive oil, add the sweet potato, onion, a pinch of salt and pepper. Cook until sweet potatoes and onions are browned and potatoes are tender. Add the chicken back to the pan and toss to combine. Top with parsley and a fried egg if desired.
Instead of uncooked chicken thighs, you can use leftover roasted or rotisserie chicken in this recipe for an even quicker prep.
