I do this thing (probably a weird thing) where I collect fancy packages of pasta from random places like HomeGoods or wherever and hoard them for when I want fancier pasta or when I want pasta to look extra cute. This was an extra cute, fancy-ass-pasta lunch situation and I thank goodness my pasta-hoarding skills were in effect.
This recipe is another blogger collab with the vibrant Mary of The Kitchen Paper. We were feeling all “let’s-eat-our-feels” which warranted big plates of carbs with heaps of hearty, spicy tomato sauce. And cheese, always cheese. Anyway, this sauce! It’s so easy–like 20 minutes and done–but also so, so delicious–thank you bacon and spicy Fresno chiles. We decided to temper some of the spice with generous dollops of whole milk ricotta (go whole milk! or if you want a game-changer: homemade ricotta). A shower of parmesan and some basil are just delicious bonuses.

I thought I was the only one that bought that fancy ass pasta. My husband swears it’s 100 years old and that no one should eat it but I serve it to them anyway because it makes your pasta dish look hellamazing! ( I just made that work up) I need this recipe because pasta + bacon + cheese= Damn!
I’ve had that concern, but seriously–the turnover in those stores seems to be pretty quick and where else can I get fancy-ass pasta at a discount and buy a random seasonal pillow in one trip?
