I’d Eat That is a (mostly) weekly feature where I share things I’d eat from around the internet, as well as things I’ve shared here and elsewhere.
Just a brief little PSA about these berries, they’re from Columbia Farms U-Pick on Sauvie Island. It’s a quaint farm with lots of berry varieties (pictured are blueberries, boysenberries, red currants, raspberries, more blueberries, and marionberries), handy wagons to cart your haul (and your kid) through the thickets, and friendly staff. Since the farm is just 30-minutes from my house, I’m already scheming plans to go back!
Since it’s #POPSICLEWEEK I’m going to link to a few pops here, but I don’t want to only mention popsicles, so you can also head over to Wit & Vinegar to see ALL of the contributions this year and years past.
These Spiderman Cookie Dough Ice Cream Sandwich Pops are INSANE. Courtney always makes the cutest treats!
Prosecco Raspberry Popsicles, aka gorgeous, simple, refreshing, and BOOZY.
Living, breathing, and dying over these Wintermint Chocolate and Torched Meringue pops! I mean, torched meringue!! So cozy!
Also, these London Fog popsicles–our friends in the southern hemisphere know how to make a chilly popsicle feel cozy!
I LOVE cookies and cream ice cream, so obvs this Fresh Raspberry Cookies and Cream is calling me.
If a pie could be darling, this Matcha Cream Pie is absolutely the most darling of them all.
MOR PIE! This Peach and Pineapple Pie has a coconut oil crust!
Wild Caught Tuna Crostini–so much lunch inspiration! One of my favorite lunches is a tuna melt, these are that but waaaay fancier.
Soon we will all be asking what to do with the zucchini we’ve been gifted or grown–this Broiled Zucchini with Bacon Bread Crumbs is definitely a thing we should all do.
ICYMI! (In Case You Missed It!):
3-Ingredient Passion Fruit Popsicles–creamy, tangy, sweet, accidentally vegan, and so easy.
Kahlua Coffee Soda–boozy, fizzy, and swirled!
Nectarine and Raspberry Frozen Yogurt Pops–easy, fruity, naturally sweetened.
PB&J Donuts–the fluffiest, pillow-like dough filled with homemade jam and dusted with peanut butter powder. Seriously, to die for.
Over At Betty’s:
Chicken Bacon Ranch Pasta Bake–total comfort, total crowd-pleaser.
Dark Chocolate Almond Cheerios Bars--chewy, gooey, chocolatey goodness!
