Baileys Chocolate Cookies

Baileys Chocolate CookiesOf all the Baileys infused treats I made for this week, these chocolate cookies may have been the fave among my friends and family. Maybe we’re just a bunch of cookie monsters, but in my totally unbiased opinion (ha) they are chocolatey, chewy perfection. Think a chocolate chip cookie meets a brownie with that unmistakable Irish cream flavor. The cookie base is a riff on my basic chocolate chip cookies, swapping some of the flour for rich cocoa powder. There are white chocolate chips and walnuts in there for texture and a sweet+bitter balance. Baileys replaces the vanilla extract and even though there isn’t a ton of it in the cookies, the flavor is totally there making the perfect complement to the fudgy cocoa flavor.

Baileys Pumpkin Spice Pie

Baileys Pumpkin Spice PieBaileys Pumpkin Spice Pie! This is the kind of pumpkin pie I like to see in the Fall. I’m not super into the classic pumpkin pie, I like a lighter texture and some creaminess to the filling…enter this pie! The filling is a mixture of cream cheese, pumpkin puree, caramel sauce (yes, in the filling!), with some whipped cream folded in at the end for a lighter texture. The crust is a classic, buttery graham cracker shell–making this pie nearly no-bake and super easy to execute since you don’t have to fiddle with pastry. Piped swirls of whipped cream and a drizzle of caramel sauce make it feel fancy, no one needs to know how easy it is to whip up.

Baileys Coffee Custard Donuts

Baileys Coffee Custard DoughnutsBaileys Coffee Custard Doughnuts!!! It is no secret that I am a lover of doughnuts, in fact, I have a doughnut friendship tattoo (with this lady!) on my body. These Baileys-spiked pillows are made using my favorite Hokkaido Milk Bread inspired dough. This recipe begins with a roux that creates the most magical, plush and feathery dough with just enough chew to let you know it’s a yeast risen. I like to allow the dough to rise overnight–the flavor of the finished dough has more depth from the slow rise and the chilled dough is much easier to handle. The coffee custard is spiked with Baileys Original Irish Cream and lightened with a little bit of whipped cream for a mousse-like custard. The classic chocolate glaze is also spiked with Baileys to lend just another layer of that distinctive Irish cream flavor. Baileys Chocolate Crunch CakeThis week I am partnering with Baileys on Instagram to celebrate Baking Week and to kick off the festivities, we are going to start with this Baileys Chocolate Crunch Cake! The cake is 3 layers of rich chocolate, swathed in Baileys Coffee Swiss Buttercream, filled with caramelized rice-cereal brittle (the CRUNCH component), drizzled with ganache, and gilded with edible gold leaf. Like many tall layer cakes, there are a few steps in this recipe but the results are totally worth it–plus, you can easily break up the steps over several days and assemble the final day.

Piña Colada PopsiclesHI! It’s #POPSICLEWEEK and this year I made Piña Colada Popsicles dipped in a little white chocolate and topped with a cherry because why not? The actual pops are super easy blender situation of fresh pineapple, coconut milk, a little coconut butter to bump up the flavor, a squeeze of lime, and a little rum. Basically, it’s an adult smoothie. The only things missing are those crinkly little umbrellas and a sandy beach.

Pineapple Vanilla Bean Margaritas

It’s been a while (moving, adjusting, dropping the ball, chilling…etc, etc.) and I thought I’d ease back into things with a margarita because a) it’s Cinco de Mayo this week (also, how is it MAY ALREADY?! and why does the passage of time always get me?) and b) why not? These Pineapple Vanilla Bean Margaritas are my offering for this years #MargaritaWeek hosted by the lovely and inspiring Kate of ¡Hola! Jalapeno–I love seeing snippets of her life on IG and be sure to check out her stunning Strawberry Pink Peppercorn Margaritas asap.  These margaritas start by roasting pineapple with sugar and the insides of a vanilla bean to make a heady syrup that sweetens and flavors this cocktail. The vanilla bean speckled pineapple syrup is cooled and mixed together with fresh lime juice, pineapple juice, and tequila…of course. Then, glasses are rimmed with a salted mint sugar for a pop of sweet-salty herbal brightness.

Raspberry Sandwich Scones

Raspberry Sandwich SconesHi! It’s been a while, ya’ll! Honestly, I have no amazing excuse. I mean, yes, we are in the midst of an out of state move, but it’s been relatively easy thus far (I am probably jinxing myself here, so watch out for that). Our house sold within a week and we are barreling toward the easiest closing of all time with only a vague idea of where we will live once Casper and I arrive in Reno in the next few weeks. The truth is, I’ve been absent from this space not just because of the hectic nature of moving, but because of the state of everything in the country and a lot of personal bs that just sort of swirled together into a perfect storm of clinical + acute anxiety that has been a real bitch to navigate.  Things feel broken and it’s like one terrible thing after another and it just feels difficult to make pretty things without at least addressing it a little. I’m trying to balance being addicted to the news cycle and actually being a productive human being and mother. I have a relatively easy life and a lot of wonderful support, so feeling down or anxious leaves me with a lot of feelings of guilt that I’ve been trying to reconcile, but that’s a whole other emotional monster that we don’t need to wake right now. I’ve been trying to remind myself to keep my chin up–for both my sanity and for the sake of my kid–but keep my eyes open because they’ve been half asleep for far too long and there’s a lot of work I’ve missed and much more to do. I also want to be there, listen, and do what I can when I can. I’ll keep it brief and vague regarding the political climate, but if you follow me on Instagram you probably know how I feel (or Twitter, because that’s where I let myself get REAL-real).
