Last night I peeped this skillet of love (ew, apologies) over on Instagram for a little virtual dinner party I participated in. I brought something sweet to the festivities because all dinner parties need dessert, right?! I figured I should just go ahead and share the recipe over here, too. Why hold out on you when there’s chocolate, crunchy shards of candy cane, and marshmallows involved? This skillet brownie is chewy around the edges,  gooey through the middle, packed with melty chocolate chips, sticky marshmallows, and bits of minty candy canes. It’s the kind of thing you should share, not just because it’s really rich but also a total crow pleaser. I guarantee you’ll see some eyeballs light up if you set this on the table after dinner, I mean who can resist a warm brownie? The only logical way to serve up this brownie bebe is warm from the oven with plenty of ice cream and a grip of spoons.

A gooey, fudgy, shareable skillet brownie loaded with crushed candy canes and melty marshmallows.

Serves: 1, 8-inch round brownie

Ingredients
  • 6 tablespoons unsalted butter
  • 6 ounces semisweet chocolate chips
  • ¼ cup cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs, lightly beaten
  • ½ cup all-purpose flour
  • ¼ teaspoon kosher salt
  • ½ cup semisweet chocolate chips
  • 1 cup mini marshmallows
  • ¼ cup crushed candy canes
Instructions
  1. Preheat the oven to 350°F.
  2. Melt the butter in an 8-inch cast iron skillet or another oven-safe skillet. While the butter melts, put the chocolate chips in a heatproof mixing bowl. Pour the hot, melted butter over the chocolate chip to melt. Stir until smooth. Stir in the cocoa powder and sugar, mix well. Stir in the eggs and mix well. Fold in the flour and salt. Fold in the chocolate chips, marshmallows, and candy canes. Bake for 25 to 30 minutes, the edges should be set, but the center should still be a bit gooey. Scatter additional chocolate chips, marshmallows, and candy cane pieces over the top if you like. Serve warm with lots of spoons and a few generous scoops of ice cream.
