Sparkling Lilikoi LemonadeI’m going to keep this brief because I’m actually visiting my BFF for her birthday and we have big plans to peruse Sephora, child-free! I’ve been looking forward to this for weeks. No joke. 

I usually like the winter–I like cozy, indoor things and hate being hot–but, guys, I am so ready for sunshine, the lack of muddy paw prints across my floors (UGH), longer days, and patio drinks. Since it’s still winter and still citrus season I’m bringing the sunshine indoors with this Sparkling Lilikoi (aka passion fruit) Lemonade. I love passion fruit, I always think of it as the flavor that makes anything dubbed “tropical” taste so tropical. Side note: There’s a Hawaiian restaurant in our neighborhood (Ohana) and they have a cake called the “Lilikoi Dream Cake” it’s a chiffon cake that’s filled and topped with lilikoi curd and whipped cream. It seriously is a dream.

Anwyay, this lemonade! It’s seriously like sunshine in a glass–so sweet-tart and refreshing. Since passion fruit is hard to find fresh, I just go to the Asian market (I got to Fubonn in PDX, thanks for the pro-tip Michelle) where they have vacuum packed bags of whole passion fruits in the freezer section for less than $3.

A tropical, effervescent take on classic lemonade.

Serves: 5-6 servings

Ingredients
  • ½ cup passion fruit (lilikoi) juice, from about 5 passion fruits
  • ½ cup lemon juice
  • ¾ to 1¼ cups simple syrup
  • 3 cups sparkling water
  • simple syrup:
  • 1 cup sugar
  • ¾ cup water
Instructions
  1. Combine the passion fruit juice, lemon juice, simple syrup, and sparkling water together in a pitcher and stir. I like to start with ¾ cup of the simple syrup and add more to taste.
  2. To make the simple syrup, combine the sugar and water in a saucepan. Bring to a boil, stirring to dissolve the sugar. Remove from the heat and cool. Store in a lidded container in the refrigerator until ready to use.

    This sounds so so yummy! Whenever I’m visiting my family in Brasil, we drink and eat SO much passion fruit. This is making me miss it even more!
